Hearty, Low Fat and Lycopene Loaded Tomato Basil Soup Recipe

Ingredients:
- 1 cup Light & Tangy V8® Juice (to desired thickness)
- 1 cup low sodium chicken or vegetable stock
- 1/2 cup fresh basil, chopped
- 1 (12 oz.) can evaporated skim milk
- 2 Tbsp. grated Parmesan cheese
- 2 Tbsp. sour cream
- Salt and pepper to taste
Directions:
- Combine tomato juice and chicken stock in a sauce pan.
- Stir in evaporated milk, margarine, sour cream, cheese and basil.
- Simmer on medium heat for 20 minutes.
- Add salt and pepper to taste. Garnish with basil leaves.
