Zesty Grilled Chicken Breasts with Lemon and Greek Yogurt

Ingredients:
- 1/2 cup plain low-fat Greek yogurt
- 1/8 cup lemon juice
- 1 Tbsp. lemon zest
- 1 Tbsp. olive oil
- 4 cloves garlic, crushed
- 1 Tbsp. paprika
- 1 tsp. salt
- 1 tsp. ground black pepper
- 8 chicken breasts
Possible topping:
- 1/2 cup plain low-fat Greek yogurt
- 1 Tbsp. lemon juice
Directions:
- Mix the yogurt, the lemon juice, the lemon zest, olive oil, garlic, paprika, salt and pepper in a bowl. Pour into a resealable plastic bag with the chicken. Marinate in refrigerator for 2- 3 hours.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Combine additional 1/2 cup yogurt, 1 Tbsp. lemon juice in a small bowl. Set aside.
- Remove chicken from bag and transfer to a plate.
- Grill chicken on the preheated grill for 2 minutes. Turn each piece and move to indirect heat.
- Grill, turning often, with lid down until well-browned and meat is no longer pink in the center, 30 to 35 minutes. An instant-read thermometer inserted into the thickest part should read 180 degrees F. Topping optional.
