Light Romesco-Inspired Sauce with Tomato and Cilantro








 

Ingredients

  • 1- 28 oz. can crushed tomatoes (Muir Glen fire roasted are excellent)
  • 2 - 3 red bell peppers, roasted*
  • 1 poblano pepper, roasted
  • 1 garlic clove (or to taste)
  • 1/2 cup almonds
  • 1/4 cup toasted bread
  • 1/2 cup cilantro, fresh
  • 1/4 cup extra virgin olive oil
  • Salt & pepper to taste

Directions

  1. Place first 6 ingredients in food processor.
  2. Pulse while drizzling in olive oil to smooth or slightly chunky texture.
  3. Add salt and pepper to taste.

Tip: This is quite a versatile sauce. It is usually served at room temperature as a dip. However, it can be warmed and served with fish, poultry or meat. This nut and red pepper based sauce originates from Catalonia, Spain. The central ingredients are roasted red peppers, garlic and nuts, which are all prominent in this region of Spain. I add canned tomatoes to increase the serving size and therefore decrease calories per serving.
