Greek Yogurt Adds Protein to This Performance Pancakes Recipe

 

 

 

 

Ingredients

  • 1 cup vanilla Greek yogurt
  • 1 cup low-fat or fat-free cottage cheese (small curd)
  • 3 eggs or six egg whites
  • 1 tsp. vanilla
  • ½ cup all-purpose flour
  • ½ cup oats
  • 1/3 cup wholewheat flour
  • 1 Tbsp. sugar
  • 1 Tbsp. cinnamon
  • ¼ tsp. salt

Directions

  1. Mix the wet ingredients together.
  2. Stir in the flours, oats, sugar, cinnamon and salt.
  3. Spray a skillet with non-stick spray.
  4. Use medium heat.
  5. Pour batter and cook for approximately two to three minutes.
  6. Flip to cook other side!
